As far as I know map editing isn't a practical option until they release more tools.

I really don't have time in my life for Civ right now, but know that I'll be lurking with interest. I would really like to play a Civ6 PBEM/PB at some point. Maybe this summer....

I'm looking forward to this. If it goes well, it might give CIV6 the kick in the pants it needs on this site.

So we roll for a map. How do we go about this?

Waiting till yuris has time would be a start (He can't play before feb 12 th).
BTW I have all DLC (and will automatically get the next 2 too).

As my experience is low with PBEMs, who would roll/organize a map for us? I guess someone who doesn´t play.

Oledavy? ASM?

Here's some perspective from organizing Civ4 PBEMs and PBs.  I'm sure some details will change but the general approach should still work.

If you're just rolling a map, rather than having one edited...first player can do it once you all agree on settings.  I would expect Hotseat first turn to not give any extra information to the player just because he generated the map.  Theoretically first player could pull shenanigans with rerolls or whatever, but we generally rely on trust anyway for so many other aspects of the gameplay, what's one more?

Negotiate what settings you're going to use.  Map size, map type, difficulty, etc.  Tech trading?  Diplomacy?

Negotiate any bans.  Any tactics that seem both unbalanced and unfun to ban?  Any civs or leaders?  There's a fairly standard list for Civ4, which should be mostly irrelevant for Civ6, you'll have to invent 'standard bans' yourself.  I suspect for a first game you won't want to ban much, you won't know what's broken until after playing a bunch of games.

Figure out how you're selecting leaders and civs.  Civ4 games generally had a third party generate a random pick order, and then either a snake pick or just picking civs in that order, but we had all sorts of alternate schemes eventually.  I doubt there's enough agreement on civ6 strengths to do any sort of point system, and I don't think unrestricted leaders is an option?  So probably you just want to go with the basic approach, or else have civs assigned randomly.

List out playing windows for everyone, and use that to come up with a turn order.  You want to set it up so that you have the best chance of a turn/day pace.  Possibly have a third party roll to choose first player (for example, you figure out an order ABCDE, third party chooses D, so you end up with DEABC - same effect on turn pace, even odds of getting to be first player or not).

Exchange enough contact information to be able to pass the turn reliably, poke someone if they forget, etc.  The PYDT website might take care of this for you, but you probably want to exchange e-mail addresses as well.

In this particular case, I'd suggest you also make a quick test game, to make sure everyone knows how to use PYDT, end turn, open the new turn, has compatible DLC, etc.  It seems likely you end up with some sort of error that requires regenerating the save, best to do that with a test game.

Ask the admins for a subforum in which to report.  Create at least a tech thread to host any discussions about technical difficulties, announce any pauses (RL does sometimes intrude), that sort of thing.  Lurkers would prefer if you also make reporting/spoiler threads but it's not strictly required.

I agree, seeing as this is the first PBEM, its going to be hard to come up with a banlist. We don't know what's OP.

Seems like the most productive thing to do is try some test games and make sure everything works and get everyone's emails. Then the players can muse about which map settings are best. Which brings me to the question: does anyone know what the difficulty modifiers work in MP games? What does it impact?

It's best to test these things before we actually start a game, so I created a test game on the website. Could some of you join the following game (game link with password: realms) to see how the website functions?

In terms of difficulty, the following link explains it well Reddit link. Since we won't have any AI players in the game, the only effect of difficulty setting would be on combat (which would be cancelled out since we will all play on the same difficulty), bonus XP below prince difficulty and extra camp gold below prince. So overall, negligible-to-zero impact on the game.
