With the above tech outline, it seems like the options being considered are (a) most military builds during GA aiming for a HA/zerk attack immediately after GA, or (b) mostly infrastructure/peaceful expansion prior to & during GA with knight/zerk military buildup mainly post-GA (possibly timed for ~10t after GA ends.) What are the pros & cons?
I'm not really convinced that HAs and berserkers is better than just a lot of berserkers. Along with some cats of course.

Well, that could work with Engineering. Really, i'm a bit of a sucker for a debilitating first strike, and with Nakor i have in mind capturing or razing 3 cities on the opening move of the war: Using 2-movers to take Smoke Springs Hold and Red Springs Hold, and then coming with zerkers on galleys to capture Nine Springs. The mounted units would continue to push south to take Coldara Hold while the zerkers stay with their boats and take Alcair Dal, or maybe go overland with cat support since it really isn't a coastal town. But this would leave the capital cut off and surrounded if it worked. Going early war like this means we'd want to get a barracks and stable in the capital as well, probably right after the market finishes What do you think scooter? I think we need to start prepping for war if we want to hit as soon as knights are available

I was about to blame scooter for that but with how this week has gone it could have been me in a rush. I did plantation+chop the jungled dye and will take full responsibility for that choice

After sleeping on it, I think you should invade them with Zerks and HA. Knights aren't going to be that much better if you're relying so much of Zerks. You probably don't want to be fighting wars on multiple islands. Maybe just planting the troll city in reteps back lines would be good enough.
